8. Repeat to make the remaining cannelloni, re-sheeting the reserved dough as necessary. Dry on the dowels until firm enough to hold their shape, about 30 minutes. Do not be tempted to store them on the dowels for more than 1 hour, as if they fully dry, the dowels will cause them to crack. Remove them from the dowels and place them on a parchment-lined and semolina-dusted sheet pan. Store them at room temperature for 4 hours or in the refrigerator covered with plastic wrap for up to 3 days.
9. Boil in salted water for 2 to 3 minutes, drain, dress, and serve immediately.
